Julia's Cheesy Vegetable Bake
I ate this recently at my Aunt's - it was so tasty I just had to get the recipe and try it out for myself. It's very easy to make:
Cheesy Vegetable Bake (Serves 6)
2 carrots, grated
1 courgette/zucchini, grated
1 onion, sliced
50g butter
1tbsp flour
4 eggs, beaten
75g parmesan, grated
200g cottage cheese
200g cream cheese
2 garlic cloves, crushed
1 tbsp lemon juice
2 tbsp fresh dill
salt & pepper
1. Sauté the carrots, courgettes & onion in the butter for 5 minutes
2. Sprinkle on the flour and stir in
3. Remove from the heat, stir in the cheeses, garlic, lemon juice & dill
4. Stir everything together and add the beaten eggs & seasoning
5. Pour the mixture into an 8” greased flan tin and bake at 200C for 50 minutes or until set
6. Enjoy!
