Quinoa Pizza Bake

A few people tried last week's Cauliflower Crust Pizza recipe and agreed that it's a tasty and easy to make alternative to a traditional pizza base. So here's another one for you, this time using protein-packed Quinoa.

This isn't really a 'solid' pizza, like the cauliflower version. I think the name comes more from the mix of pizza-style of ingredients ~ tomato, oregano and a cheese topping.

Quinoa Pizza Bake

Serves 4 or two hungry people

125g uncooked quinoa
250ml vegetable stock170g can tomato paste3 cloves garlic, minced1 small onion, diced2 tbsp water2 tbsp good quality extra virgin olive oil80g mozzarella cheese1 tsp oregano5 fresh basil leaves (plus more for garnish)salt and pepper to taste

1. Combine quinoa and vegetable stock in a small pan. Bring to the boil and cover, turning down to low and then simmering for 15 minutes until all the liquid is absorbed. Remove from the heat and set aside.
2. Preheat your oven to 180C/350F/Gas Mark 4.

3. Brown the onions and garlic in a pan until the onions are translucent.

4. In a small bowl, combine the tomato paste, garlic, onions, water and olive oil, and mix well. Add in the oregano and basil and mix before adding everything to the quinoa.

5. Add half the mozzarella cheese to the quinoa and mix. Season to taste.

6. Transfer the mixture to a casserole dish and sprinkle with the remaining cheese. Bake in the oven for 30-35 minutes until the cheese is melted and bubbly. Sprinkle with fresh basil and serve with a favourite vegetable.

It's a quick and easy mid-week dish using mainly store cupboard ingredients - what's not to like?
