A very Happy New Year to you all!

To kick off 2014, I have a Colombian cake recipe for you. We made this for our New Year's Eve party. It's light, fresh and zesty ~ the perfect sweet treat to keep you going through January.

Torta Maria Luisa

180g plain flour
1 teaspoon baking powder

300g sugar
240g butter
6 large eggs
Zest of 1 lime
120ml orange juice
Orange marmalade
Icing sugar to finish

1. Pre-heat your oven to 180C.
2. Combine the flour, baking powder & lime zest in a bowl until the zest is incorporated.
3. Add the orange juice, eggs, sugar & butter and blend to a smooth batter.
4. Divide the mixture between two greased & lined round baking tins.
5. Bake for 30-35 minutes until golden and a cake tester comes out clean.
6. Leave to cool for 1 hour.
7. Spread the marmalade thickly onto one half of the sponge, then add the other half to make a sandwich.
8. Dust the top of the cake with icing sugar before serving.

Enjoy a slice of the cake with a cup of tea or as a dessert and bring a little bit of Latin into your January!
