Date & Seed Power Bars Recipe

If you follow my Instagram feed, you'll know that on Saturday I took part in the 1day12pics challenge. One of the things I did that day was to make these delicious bars, something I've been meaning to do for a while. I've tasted a few good protein snacks recently and a lot bit of time spent on Pinterest inspired me to have a go at something similar myself.

These bars are quick to put together and make a delicious post-workout treat, or whenever the urge to snack takes you.

1 cup of dates
2 tbls coconut oil

1 tbls honey
0.25 cups coconut flakes
0.25 cups sunflower seeds
0.25 cups pumpkin seeds
3 tbls flaxseed
1 tbls poppy seeds
1 tbls sesame seeds
0.25 cups oats

1. Chop the dates as finely as you can
2. Melt the coconut oil
3. Mix all the ingredients together in a large bowl

4. Press into a dish

5. Cook for 8-10 minutes at 180C
6. Allow to cool completely (put in the fridge to ensure the perfect set)

7. Cut into bars and enjoy!
