The Easiest Cake Recipe Ever?

It's been a while since I did any baking so when I knew a friend was coming round for afternoon tea on Sunday it seemed the perfect opportunity to get back to it.


This cake is legend in our family. It first came from my maternal Grandmother. When I was growing up it was my Mum's go-to recipe for school bake sales and quick weekend lunches. I passed it on to my (impressed!) housemates at University. I made and ate it in my first flat in France. We still have it often when we visit my parents. And now my sister and I make it in our own homes.


I guess you're wondering why it's so popular? It's super quick to make, there's no weighing or measuring and it's pretty healthy to boot. You really can't go wrong here, believe me!


All-Bran Cake


Ingredients
Equal quantities of the following (I usually measure it all out with a mug):
All-Bran cereal
Dried mixed fruit
Milk
Self-raising flour
Sugar (sometimes I half the amount of sugar to up the health factor)

Instructions
1. Mix the All-Bran, sugar, fruit and milk in a bowl and leave to soak for an hour



2. Pre-heat your oven to 180C / Gas Mark 4

3. Grease & line a medium-sized loaf tin

4. Stir the flour into the mixture


5. Pour into your loaf tin



6. Bake in the middle of the oven for 1 - 1.25 hours or until a skewer comes out clean



That's it! It really is the easiest thing and tastes deliciously moist. Eat with a cup of tea or after lunch. It's also a great lunchbox staple.

The cake will keep in a sealed tin for a few days ~ if it lasts that long! As you can see we managed to demolish half of it before I remembered to take an 'after' shot...
