I talked here about my new found love of spiralizing. This little pot of yum takes moments to put together and hits the spot nicely for a quick snack or if you fancy something a little bit sweet after a meal.
Spiralized Apple Pot
Serves 1
Ingredients
1 small, sweet apple
1 tbs ricotta cheese
2 tsp toasted flaked almonds
sprinkle of cinnamon
Instructions
1. Spiralize the apple using the largest blade (or slice it thinly if you don't have a spiralizer)
2. Pop in the microwave and heat on high for 30-40 seconds
3. Stir in the ricotta and cinnamon
4. Sprinkle with the almonds
5. Enjoy!
It really is that easy and so, so yummy! You could also add a few blackberries or blueberries if you fancy. Kind of like a healthy apple pie or crumble without the carb load. It would make a nice breakfast option too, don't you think?
